Healthy Eating On A Student Budget

Being a student we all know that money is tight and not all of us payed attention enough to gain the all essential culinary skills to succeed in domestic life. But preparing food at home is a great way to save on money and a great way to stay motivated away from the temptation of bad impulse bought foods that we all regret after the hunger fades.

Here are a couple of easy snacks to get you started that won't break the budget or your diet!

Spicy roasted chickpeas are delicious and so easy to make for a snack to have anywhere. This snack is spicy and crunchy yet satisfying. If you don't like spicy foods then leave out the spice for a crunchy fun snack!

The best part about this recipe is that it only has 4 ingredients;

  • 1 can (15.5 ounces) chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper

Directions;

  1. Preheat your oven to 200 degrees celsius and line a baking tray with foil
  2. Place chickpeas, olive oil, salt and cayenne pepper in a bowl and mix well
  3. Spread evenly on tray and bake for 15mins
  4. Take out tray and shake to ensure all chickpeas are browning evenly
  5. Bake for another 15mins or until brown and crunchy
  6. Can be eaten warm or at room temperature

Frozen Grapes

Now that summer is approaching, I love to always have frozen grapes at the ready for a sweet snack to cool down. They are so simple but so tasty! Just put some grapes in the freezer and in about 2 hours they are ready to go.

Sweet Potato Chips

Sometimes we just crave chips. I know I do. So when I find myself thinking about those hot golden sticks of guilt; I make sweet potato chips instead. They are so easy to make and such a healthier accompaniment to meals or just to snack on. Simply peel and slice lengthwise into a thickness you deem appropriate. Toss in olive oil and seasoning - I like to add a bit of paprika to spice things up. Bake for approx. 20-30mins depending on the size of the sweet potato.
